Hello and welcome to the home of REAL, real ale.
The Keltek Brewery started life as a small 2½ barrel plant in Tregony, the gateway to the Roseland Peninsular in Southern Cornwall. The Brewery won it’s first gold medal for “Keltek Kornish Nektar”, a honey based ale (that really tastes of honey), just 3 months after it was founded and followed that up with another gold the following week for the same product. Over the years the brewery has continued to receive numerous awards both in the UK and abroad, including the pinnacle of achievements, the SIBA National First prize for Keltek King (bottle conditioned) in 2001. Since October 2005 we have been brewing from our new, purpose-built 20 barrel plant in Redruth.
We use older style malts from traditional floor maltings, not cheap modern hybids, and we use hops that are kept in a vacuum seal and checked for aroma before each brew to ensure the highest flavour quality.
Here’s some important information.
We have recently changed the way we fill our polypins as we have found that by pre-fining the beer at the point of casking and then cask conditioning the ale for a minimum of 3 weeks in our cold room we can provide you with a stunning result and with the additional benefit of clear beer so little or no wastage. We add further finings if needed 24 hours before final racking into the polypins which are filled, usng some special gear we designed for the job, just before the ale is shipped to you. We keep the stronger beers like Beheaded longer in casks as they tend to have slow fermenting sugars in abundance and continue to work for some weeks after being racked off from the FV, even after several weeks of conditioning. If you ever buy these from us and keep them for several more weeks ("fat chance of keeping it that long" did I hear you say?)you may find the ale developing a slight haze. If that happens call us and we will send you some finings in the post to clear the beer again.
Although they are very durable please check the polypin container occasionally if you are going to keep the beer for any length of time, to make sure you let out any excess gas that could cause it to burst!!…Oh, and by the way, we designed the box so you can get to the polypin easily and pop in an ice pack in the summer or push down on the polypin to get out the last few drops of beer. Re-useable ice packs are now available the right size for the 10L & 20L polypins by the way. They are lightweight so cheap to post and you soak them and freeze them and can re-use them many times.
If you are pulling off beer fairly quickly or you are near the end of the supply it is important not to let the tap gurgle back or you will have let air in and the bacteria will be able to get to work turning all that alcohol, we so lovingly produced, to vinegar. If you do let the tap gurgle…get drinking…you have a couple of days or so.
Here’s something new to try.
Personally I don’t approve of finings and because I am lucky enough to have the choice, I drink my beer totally natural, but sadly in this world of business taxes and hyped-up marketing our brewery can’t afford just to take a stand by making all our beer cloudy to the exclusion of all else whilst we try to change people’s minds…to some extent we have to conform….but we can do the next best thing…..
Because I think beer should really be full of flavour, cloudy and natural (and free of the animal extract and preservatives that are in the isinglass finings) we have made a special version of KELTEK MAGIK, called “NATURAL MAGIK” that is just that & from this week onwards it will be a regular item …suitable for vegetarians & vegans alike. We even avoid putting in the carageenan-based copper finings (which serve to remove some of the natural haze producing proteins and thus aid clarity). This will be a permanently available product from now on containing just water malt hops and yeast. I just can't believe how many things we are allowed to put in beer without declaring them on our ingredients list. We don't do that kind of thing, so if you get a clear beer from us... just like from other breweries who may prefer you didn't know about it... it has isinglass finings in it (which is fish extract collagen with a goodly dose of sulphur dioxide based preservative).
Just remember that from KELTEK you have a choice not to have that kinda stuff in your beer.
Actually I think you will be surprised at how tasty the beer is when it’s not messed about with and has nothing removed! It’s also a grand ingredient for food.
So there we have it. A brewery with a difference and the inventors of the “Mikrocellar™”.
